Eggplant in Garlic Sauce

Eggplant in Garlic Sauce

What do you need?
--------------------------
1.5 lb. eggplant (1” x 1.5” x 0.5” pieces)
1 cup vegetable oil
1/2 tsp sesame oil
1 tsp cooking wine
2 tsp vinegar
5 tsp soy sauce
2 tsp cornstarch
1/4 cup of water
3 tsp sugar
chopped red chili
chopped garlic

How do you turn these into a delicious dish?

For the Gravy: 
 
Mix cornstarch, water, vinegar and chopped garlic together. Make sure to mix it again right before using.
 
 
For the dish:
 
1. Heat vegetable oil and sesame oil to medium high. Deep fry the eggplant until it softens and changes color.
2. Add sugar, cooking wine, soy sauce, and red chili. Stir-fry for 1-2 mins.
3. Turn the heat to maximum and add gravy. Stir fry for 1 min. --- Smells so good!
 
Simple but delicious!
